Koldskål with Kammerjunker - A Danish Summer Dessert

Koldskål, which literally means "Cold bowl" is a traditional Danish dish consisting of two parts; the first being the Koldskål itself, and the second being little biscuits that are crumbled into it immediately before being eaten.

Ingredients:
6 Egg yolks (pasteurized) 6 tbsp Sugar 1 Vanilla bean 1 liter (1/4 gallon) Buttermilk 2 tbsp Lemon juice 1. Cut open the vanilla bean and scrape out the seeds 2. Mix the vanilla into the sugar 3. Whip the sugar and egg yolks together until the sugar is completely dissolved 4. Add the buttermilk while slowly stirring the mixture 5. Add lemon juice to taste 6. Refrigerate |
Ingredients:
2 Eggs 150 g (5.3 oz) Sugar 50 g (2 oz) Butter 300 g (10.6 oz) Flour 1 tsp Baking powder 1/4 tsp Salt 1. Melt the butter, and let cool off (it should remain liquid though) 2. Whip eggs and sugar together 3. Add the melted butter to the eggs and sugar 4. Mix the dry ingredients together and then mix carefully with the wet 5. Knead the dough together. 6. Let the dough rest in the refrigerator for about an hour. 7. Roll dough into 3 sticks of about 35 cm (14 inches) length each. 8. Place the sticks on a baking tray lined with paper in the middle of the oven and bake them for about 25 minutes at 175°C (347°F) 9. Take out the sticks and let cool off for 1-2 minutes (or until you can touch them without burning yourself) 10. Cut the sticks into ½ cm (0.2 inches) thick slices. 11. Put the slices back on the baking tray and bake for another 15 minutes at the same temperature. |
Serve the Koldskål cold and with plenty of Kammerjunkers.
Break one of the Kammerjunkers into the Koldskål and eat the two together before the Kammerjunkers get soggy. It is a good idea to have a plate or bowl with the Kammerjunker next to the plate to make sure more can be added along the way and ensure they stay crunchy and delicious.
For added flavour, fruit such as strawberries or oranges can be added. Traditionally the dish consists of just Koldskål and Kammerjunker, however, and is delicious just like that.
